Arturo Sanchez began working in the kitchen of Lou Malnati’s Pizzeria when he was 16. Twenty years later, he is the kitchen supervisor at the pizzeria’s Gold Coast location, which opened three years ago. Sanchez makes his deep-dish pizza with the original recipe passed down through the family business and first made famous by Chicago’s first deep-dish eatery Pizzeria Uno in 1943.

Watch this short video below for a behind-the-scenes look of what goes into making an authentic Chicago deep-dish pizza. But don’t get your hopes up. Sanchez still didn’t reveal the recipe.
